I love making these potatoes while baking the kitchen smells like Thanksgiving. Great tasting side dish.

Ingredients For herb roasted red potatoes

  • 2 lb
    red potatoes scubbed and diced
  • 1 stick
    butter divided
  • 2 Tbsp
    herbes de provence
  • 1 Tbsp
    salt
  • 1 Tbsp
    fresh thyme minced
  • 1 Tbsp
    fresh rosemary minced
  • 2 tsp
    pepper

How To Make herb roasted red potatoes

  • 1
    Preheat oven 350 degrees.
  • 2
    Place 1/2 stick butter in 9 x 13 baking pan and place in oven until butter is melted.
  • 3
    Remove pan from oven and add the potatoes. Sprinkle all the herbs evenly over the top of potatoes. Cut the remaining butter into pieces and arrange on top of potatoes.

    Place pan in oven and bake 30 minutes or until potatoes are tender.
