I love making these potatoes while baking the kitchen smells like Thanksgiving. Great tasting side dish.

Ingredients For herb roasted red potatoes

2 lbred potatoes scubbed and diced

1 stickbutter divided

2 Tbspherbes de provence

1 Tbspsalt

1 Tbspfresh thyme minced

1 Tbspfresh rosemary minced

2 tsppepper
How To Make herb roasted red potatoes

1Preheat oven 350 degrees.

2Place 1/2 stick butter in 9 x 13 baking pan and place in oven until butter is melted.

3Remove pan from oven and add the potatoes. Sprinkle all the herbs evenly over the top of potatoes. Cut the remaining butter into pieces and arrange on top of potatoes.

4Place pan in oven and bake 30 minutes or until potatoes are tender.
