Ingredients For german potato salad

  • 2 lb
    potatoes, all-purpose.
  • 5 oz
    bacon diced
  • 8 oz
    red onions diced
  • 4 oz
    white wine vinegar
  • 3 Tbsp
    dijon mustard
  • 18 oz
    chicken stock heated
  • 1/3 c
    fresh chopped chives
  • salt to taste
  • fresh ground black pepper
  • 1/2 c
    olive oil

How To Make german potato salad

  • 1
    cook the potatoes in simmering water until tender.drain
  • 2
    saute the bacon until it is nearly cooked.add the sweet red onion, then drain off exces fat.
  • 3
    add the vinegar, olive oil, salt & pepper, mustard, warm stock & chives to the bacon simmer pour the dressing over the warm potatoes serve the salad warm
