garden dill potato salad
This is a recipe, my mom and I came up with when we had an abundance of cucumbers in our garden. Once we added them, we just started to add the rest of our garden. It's truly a Garden Potato Salad. Don't forget to add and subtract to your families taste. Don't have regular tomatoes? Well if you have a bumper crop of cherry or grape tomatoes, use those exploding fruits, cut in half, they work just as well!! If you're really feeling froggy, cook your potatoes on the grill and add a smokey flavor.

Ingredients For garden dill potato salad

2 lbred potatoes

2hard boiled eggs

1celery stalk chopped

2scallions, cleaned, chopped

1 smdill pickle
-
2hefty broccoli florets, chopped

1hefty cauliflower floret, chopped
-
1/2cucumber, chopped
-
1/2 cplain greek yogurt
-
1/2 cmayo
-
1/2 csour cream
-
2 lgbaby carrots, sliced
-
1 smtomato, chopped
-
1 tspgarlic salt
-
1 Tbspfresh dill, chopped
-
1 Tbspfresh parsley, chopped
-
1 tspprepared horseradish
-
1 tspcajun seasoning
-
1 Tbspdijon mustard
-
fresh cracked pepper to taste

2 Tbspheaping, feta cheese
-
1 smred pepper, chopped
How To Make garden dill potato salad

1PLACE IN BIG BOWL AS YOU GO!!!

2Red Potatoes, Cooked till tender, cooled, cut up into similar sized pieces

3Eggs, cooked, cooled and chopped up
-
4Add all the other ingredients, except the Tomatoes and the Cucumber. Add them last, after dressing has been stirred in.
