easy ham and potato hash
This is a quick meal for any time of the day. Simple and delicious. The recipe is for one serving, but you may multiply, if desired. For St. Patrick's Day, swap corned beef for the ham. So good!

Ingredients For easy ham and potato hash

1/2 Tbspbacon grease or butter

1/3 cdiced onion

1 mdcooked potato, coarsely chopped or cubed (baked, boiled or microwaved, 1 cup)

fresh ground black pepper, to taste

salt, to taste

1/3 to 1/2 csliced, chopped, cooked smoked ham

1 tspminced fresh chives (optional)
How To Make easy ham and potato hash

1Melt grease or butter in medium skillet over medium heat.

2Add onions; saute until translucent.

3Add potatoes and a generous pinch of pepper and salt; cook over medium-medium-high heat until potatoes begin to brown, turning mixture over in pan occasionally to promote even browning.

4Add ham; lower heat to medium; cook about 1 to 2 minutes, until ham is heated through and begins to brown slightly.

5Remove from heat and serve immediately (sprinkle with chives, if desired.)

6Recipe may be doubled, tripled etc...
