Good morning J.A.P. family, To-day we are fixing a chuck roast with potatoes and onions. With a little help from a can of Campbell's Mushroom soup, for the gravy. After rubbing the chuck roast with a rub and placing it in a crock-pot on top of the potatoes and onions with beef consomme and beef broth and pouring the Mushroom soup on top, we will let it cook all day. This is the evening supper!!!!

Ingredients For crockpot--chuck roast w/mushroom gravy

  • 2 1/2 lb
    chuck roast, remove twine if any
  • 4 to 5 md
    russell potatoes, peeled and cut 1" thick
  • 1 md
    yellow onions, peeled cut into 1/2 inch slices
  • 1 can
    14 oz beef broth
  • 1 can
    10.5 oz beef consomme
  • 1 can
    10.75 oz campbell's mushroom soup
  • 1 can
    7 oz mushroom, pieces and stem, drained
  • 1/2 can
    water or milk (use soup can)
  • RUB:
  • 1 tsp
    fresh rosemary, after chopping = 1 tsp
  • 1 tsp
    fresh thyme, after chopping = 1 tsp
  • 1 tsp
    minced garlic, i used jar minced garlic
  • 1 tsp
    ground black pepper
  • 1 1/2 tsp
    coarse salt

How To Make crockpot--chuck roast w/mushroom gravy

    Use a Crock-pot big enough to hold all ingredients (I used a 6 quart Crock-pot). Cut your potatoes and onions and place in Crock-pot.

    Take the rub ingredients, and mix together.

    Rub on the chuck roast, all over.
  • 4
    Take your broth, consomme, mushrooms, and pour over potatoes and onions.

    Place the roast on top of potatoes and onions.

    Open the mushroom soup, put into a medium bowl, add 1/2 can of water or milk (I used milk), using a soup can. Mix well.

    Pour over roast and potatoes and onions.

    Turn your Crock-pot to high-heat. Put cover on and cook for 4 hours.

    After 4 hours, turn your roast over, and stir your potatoes and onions and broth mixture. TURN YOUR CROCK-POT TO LOW. Let cook about 3 to 4 hours longer. Remove roast from Crock-pot to a platter. Remove potatoes and onions. Put gravy into a gravy bowl, and...."ENJOY"
