This is a delicious lower fat recipe I make w/ low fat cream cheese and light cream. Great for sunday brunches or as a side dish.

Ingredients For creamy, cheesy potatoes au gratin

3 Tbspunsalted butter

1onion, finely chopped

1 c2% milk
-
1/2 clight cream
-
salt and pepper to taste

8 ozreduced-fat cream cheese, cut into cubes

3/4 cgrated parmesan cheese

1/4 cchopped fresh parsley
-
1 Tbspfresh thyme
-
3 lbred potatoes, peeled, cut into 1/2'-slices

chopped chives for garnish
How To Make creamy, cheesy potatoes au gratin

1Heat oven to 350. Spray a 3-quart casserole dish w/ cooking spray. Melt butter in lg skillet over medium heat. Add onion, cook about 5 mins, stirring occasionally.

2Add the milk, cream and 1/2 tsp pepper. Bring to a low simmer. Add cream cheese. Cook, stirring until melted. Stir in 1/2 cup parmesan cheese, parsley and thyme.

3Place potatoes in casserole dish. Pour milk mix over potatoes and sprinkle w/ 1/4 cup parmesan cheese. Cover casserole dish w/ foil. Place casserole dish on a lg baking sheet. Bake until potatoes are tender, about 1 hr. Sprinkle w/ chives.
