This is a delicious lower fat recipe I make w/ low fat cream cheese and light cream. Great for sunday brunches or as a side dish.

Ingredients For creamy, cheesy potatoes au gratin

  • 3 Tbsp
    unsalted butter
  • 1
    onion, finely chopped
  • 1 c
    2% milk
  • 1/2 c
    light cream
  • salt and pepper to taste
  • 8 oz
    reduced-fat cream cheese, cut into cubes
  • 3/4 c
    grated parmesan cheese
  • 1/4 c
    chopped fresh parsley
  • 1 Tbsp
    fresh thyme
  • 3 lb
    red potatoes, peeled, cut into 1/2'-slices
  • chopped chives for garnish

How To Make creamy, cheesy potatoes au gratin

    Heat oven to 350. Spray a 3-quart casserole dish w/ cooking spray. Melt butter in lg skillet over medium heat. Add onion, cook about 5 mins, stirring occasionally.

    Add the milk, cream and 1/2 tsp pepper. Bring to a low simmer. Add cream cheese. Cook, stirring until melted. Stir in 1/2 cup parmesan cheese, parsley and thyme.

    Place potatoes in casserole dish. Pour milk mix over potatoes and sprinkle w/ 1/4 cup parmesan cheese. Cover casserole dish w/ foil. Place casserole dish on a lg baking sheet. Bake until potatoes are tender, about 1 hr. Sprinkle w/ chives.
