This is nsuch and under appreciated dish. Please try it you won't be sorry. Please don't save it just for St. Patrick's Day. I don't know where or when this recipe came to my family, I just know it has always been there.

Ingredients For colcannon

4 Tbspbacon drippings
-
1 lbcooked mashed potatoes

1/2 lbcabbage shredded(traditional is green but red is good as well)

1/2 lbonions chopped
-
1/2 lbbacon cut into cubes

1 pinchparsley
-
3 Tbspbutter to mix in the colcannon
How To Make colcannon

1Melt the drippings or crisco in a skillet. Add potatoes, cabbage and onions. Cook until browned.

2Add bacon and continue to cook until bacon is cooked. Season with salt and pepper and serve on a large platter top with chopped parsley.

3Add 3 Tbl. butter to melt in.
