Wow, these roasted potatoes are definitely delicious and easy. Little nuggets of perfection, the potatoes are soft and buttery. Yukon Gold potatoes are key to this recipe. As they roast, they stay wonderfully creamy. A perfect side dish for baked fish or chicken.

Ingredients For buttery roasted potatoes

  • 2 lb
    Yukon Gold potatoes, peeled and cut into cubes
  • hot water
  • 12 Tbsp
    butter (1 1/2 sticks)
  • 2 tsp
    salt

How To Make buttery roasted potatoes

  • Potatoes in a Dutch oven.

    Preheat oven to 400 degrees. Place potatoes in a large cast iron skillet.
  • Water covering the potatoes.

    Pour in enough hot water to cover about 1/4-inch of potatoes.
  • Butter and seasonings added.

    Scatter bits of butter over potatoes and season.
  • Stirring everything together.

    Then stir.
  • Baking until the water has evaporated.

    Bake uncovered about 75-90 minutes until potatoes are lightly browned and water has evaporated.
