2 lbYukon Gold potatoes, peeled and cut into cubes

12 Tbspbutter (1 1/2 sticks)

1Preheat oven to 400 degrees. Place potatoes in a large cast iron skillet.

2Pour in enough hot water to cover about 1/4-inch of potatoes.

3Scatter bits of butter over potatoes and season.

5Bake uncovered about 75-90 minutes until potatoes are lightly browned and water has evaporated.
