Ingredients For sweet cuban black beans

  • 2 c
    dry black beans
  • 2
    bay leaves
  • 1/4 c
    olive oil
  • 1 lg
    red bell pepper chopped
  • 1 lg
    onion chopped
  • 6 clove
    garlic minced
  • 1 Tbsp
    oregano
  • 1 Tbsp
    cumin
  • 1 c
    sugar
  • 1/4 c
    sherry wine
  • 1/2
    red onion chopped
  • 1/4 c
    fresh cilantro chopped

How To Make sweet cuban black beans

    Soak beans in salted water to cover 3 inches overnight. Drain and place in a large soup pot with bay leaves and fresh water to cover 3 inches. Bring to a boil and reduce to a simmer and cook until beans are tender about 2 hours.

    After an hour and a half heat oil over medium heat and add bell pepper and onion and cook until tender about 7 minutes. Add garlic, oregano, and cumin.

    Place mixture in pan with beans and add sugar, sherry, and red onions. Cook another 30 minutes. Salt to taste and add cilantro.
