Ingredients For quinoa pilaf

  • 1 Tbsp
    oil or bacon grease
  • 4
    bacon
  • 1/2 c
    onion, chopped
  • 2
    carrots, chopped
  • 5 md
    mushrooms, fresh
  • 3 clove
    garlic
  • 1 c
    quinoa
  • 2 c
    vegetable broth
  • 3/4 c
    walnut pieces
  • 1/4 c
    parsley, chopped

How To Make quinoa pilaf

    Cook bacon until crispy. Reserve 1 tbsp of the bacon fat for frying or discard and use oil.

    Cook onions for 5 minutes, add carrots, mushrooms and garlic and cook for another 3 minutes.

    IMPORTANT: rinse your quinoa very good to get rid of the bitter taste on the grains. Add the quinoa and vegetable broth.

    Bring to a boil. Reduce heat to simmer, cover and cook for 15-20 minutes.

    In a bowl toss together the quinoa mixture, walnuts and parsley. Serve warm or at room temperature.
