green tomato relish

Tomato gardeners always have a load of little greenies at the end of the season. This is my favorite use for green tomatoes. It's addictive!

Ingredients

  • 2 quarts chopped green tomato
  • 3/4 cup salt
  • 1 teaspoon pepper
  • 1 1/2 teaspoons dry mustard
  • 1 1/2 teaspoons cinnamon
  • 1 - chopped onion
  • 1/2 teaspoon allspice
  • 1 1/2 teaspoons ground cloves
  • 1/4 cup whole mustard seed
  • 1 quart cider vinegar
  • 2 - red or green peppers, sliced

How To Make green tomato relish

  • Step 1
    Mix tomatoes and salt; Cover, let stand 24 hours; drain.
  • Step 2
    Add remaining ingredients, bring to boil, cook 15 minutes.
  • Step 3
    Pack in hot sterilized jars; seal.
