Farro is an ancient grain, more easily found now in health food stores. It's crunchy, nutty flavor adapts well to a variety of additional ingredients.

Ingredients For farro salad

  • 1 c
    farro
  • 3 c
    chicken broth or water
  • 1 c
    cucumber, diced
  • 1 c
    tomato, diced
  • 1/2 c
    onion, diced
  • 1/2 md
    lemon, juiced
  • 1-2 tsp
    honey
  • 1/4 c
    rice vinegar

How To Make farro salad

  • 1
    Combine farro and water/broth to saucepan. Bring to a boil, reduce heat to low/medium and cook covered for 30 min. Drain and cool.
  • 2
    Add diced cucumber, tomato, onion and parsley or mint or combination of both (to taste).
  • 3
    In small bowl, combine juice of 1/2 lemon, honey and rice vinegar. Add to salad. Serve chilled. Can add toasted walnuts, feta cheese prior to serving.
