I'm always looking for new ways to get those healthy veggies into our diet. And this is such a tasty one, you forget it's also good for you.

Ingredients For bbq bleu cheese, bacon slaw

  • dressing:
  • 2 Tbsp
    bleu cheese dressing
  • 1 Tbsp
    bbq sauce
  • 1/4 c
    milk
  • 1/2 Tbsp
    dijon mustard
  • 1 tsp
    minced garlic
  • 1 tsp
    grated horseradish
  • slaw:
  • 1 c
    green cabbage. shredded
  • 1/2 c
    red cabbage, shredded
  • 1/4 c
    red onion
  • 1 lg
    carrot
  • 1
    scallion, chopped
  • 1 c
    canned chickpeas, drained and rinsed
  • 1/2 c
    granny smith apple, sliced into matchsticks
  • 1/2 c
    shredded sharp cheddar cheese
  • 1 c
    crisp, chopped bacon + more more garnish
  • 1 Tbsp
    dried cranberries
  • 1 Tbsp
    raisins
  • 1 Tbsp
    chopped pecans
  • 1 Tbsp
    chopped almonds

How To Make bbq bleu cheese, bacon slaw

  • 1
    Mix all the dressing ingredients together with a whisk.

    Add the remaining ingredients and toss to coat.

    To be fancy, set aside a few of the nicest looking cabbage leaves and serve in “cabbage cups”.

    Sprinkle reserved crumbled bacon on top as garnish.

    Slaw will keep in the fridge for up to 3 days.
