This dish has given me many compliment's and its cheap to make and healthy and just plain easy. You will love it as my family does and other's will ask you for this recipe. they sure do with me. At gatherings I make this dish alot and am asked for the recipe at all times. In a huge family I am considered the best cook. Enjoy

Ingredients For zuchinni casserole

1 box box1 box of uncle bens wild rice long cooking follow cooking directions

2 md2 small zuchinni

2 clove2 cloves garlic minced

1/2 md1/2 white onion diced

1 md1 whole green bell pepper diced

2 md2 roma tomatoes diced

1 Tbsp1 tablespoon olive oil

1 tsp1 teaspoon butter

1 md1 carrot diced

1 tspsalt and pepper each

1 tspmrs dash garlic flavor with herbs

1 cmonterey jack cheese grated

How To Make zuchinni casserole

1Firstly you make your rice as directed but you cut the water down by 1/4 cup of what they ask for. We want it more grainy. set aside

2take butter and butter a 13x9 glass baking dish using a paper towel set aside

3In a large electric skillet is where you do your veggies add extra's veggies you love if you want. you will use your olive oil here. heat at 350". when oil is heated add garlic cloves minced and add heavy veggies first tossing often not to burn garlic. once the veggies are tender add the softer veggies and toss . you need to watch these . use your mrs. dash and salt, pepper to taste and toss that mixture into the rice one. add to the 13x9 buttered pan . then grate your jack cheese and sprinkle over top and bake at 350" in your oven till just lightly brown on top about 20 minutes. I use this dish as a side dish. sometimes in summer for a main dish. I take to family gatherings and get all kinds of comments. they all want this recipe. and it is so easy to make. your kids get their veggies and that makes all us mom's very happy. enjoy
