Adopted this recipe from a dear friend. It is a great change from your "regular" casseroles! I hope you will try this and enjoy it as much as my family does!

Ingredients For zucchini squash casserole

4 cyellow squash or zucchuni (or mixed)

1 mdsweet onion (chopped)

2eggs (beaten)
-
2 cmozzarella cheese (shredded or cubed)

1 cancresent rolls
-
1/4 cbutter
-
1/2 colive oil, extra virgin
-
1 tsporegano
-
1 tspbasil
-
1 tspdijon mustard
How To Make zucchini squash casserole

1Melt butter and oil and add squash,onions s/p and spices cook until tender.

2Do not separate Crescent rolls! Lightly spray bottom of casserole dish with a butter spray, and roll the dough out in dish.

3In a small bowl mix eggs and cheese and some seasoning.

4Add cheese and eggs to squash mixture cook until cheese is melted.

5Pour into casserole dish and bake at 350 for 20 minutes.

6Allow dish to cool. Approx. 15-25 minutes. Cut into squares and enjoy!!!!!
