Had to find a way to use up all the zucchini from the garden!

Ingredients For zucchini cassarole

4 ccubed zucchini
-
1 ccubed onion
-
1 csour cream
-
1 cancream of celery, chicken or mushroom soup

1 1/2 cshredded mozzarella cheese
-
1 boxstove top stuffing (prepared as directed)

salt and pepper to taste
How To Make zucchini cassarole

1Preheat Oven 350

2Steam Zucchini and onions till tender

3Mix together sour cream, soup and cheese(1 cup), salt, pepper to taste.

4Line a 9x13 greased casserole dish with prepared stuffing.

5Mix together the steamed veggies with the cream mixture and pour over lined cassarole dish.

6Top with additional cheese (1/2 cup)and bake at 350 degrees for 30-45 min. till bubbly and golden.
