I hope you enjoy the summer as much as I do. I love the fresh veggies. My mom used to make this a lot in the summer. We always had a large garden. Its been in my family for years. hope you enjoy.

Ingredients For yellow squash casserole

  • 3 md
    yellow squash
  • 1 md
    onion, chopped
  • 1/2 c
    fine bread crumbs
  • 1/3 c
    cheddar cheese, shredded
  • 1/2 tsp
    salt
  • 4 Tbsp
    butter, divided
  • 1
    egg beaten or egg substitute

How To Make yellow squash casserole

  • 1
    Cook squash and onion in small amount of salted water until tender, Drain. Add bread crumbs [save one spoonful for top} Add cheese, egg,salt, and 2T. butter. Spoon into greased casserole. Top with remaining bread crumbs and dot with 2T of butter. Bake in 350 degrees for 25 minutes
