I was looking for a new and interesting way to use cook my sweet potatoes, and this was exactly what the doctor ordered. This is a tasty and sweet dish that is very easy to prepare :)

Ingredients For tropical mashed sweet potatoes

4 lgsweet potatoes, 3-1/2 pounds)

1 can8 oz. can crushed pineapple (undrained)

6 Tbspmelted butter or margarine

3/4 tspsalt
-
1 pinchpepper
-
1/2 csaltienes (crushed)

2 Tbspbrown sugar

1 pinchcloves
How To Make tropical mashed sweet potatoes

1In a large sauce pan, cover sweet potatoes with water; bring to a boil. reduce heat; cover and simmer for 30 min. (or until tender). Drain and cool.

2Pre-heat oven to 375 degrees. Peel the potatoes and place in a mixing bowl; mash. Add the pineapple, 2 tablespoons Butter, salt and pepper; mix well.

3Transfer to a greased 2-qt. baking dish.

4Combine saltines, brown sugar, cloves and remaining butter,; sprinkle over potatoes. Bake uncovered, at 375 degrees for 30 min.
