Ingredients For sweet corn casserole

  • 1/2 c
    butter
  • 1 pkg
    jiffy corn muffin mix
  • 1 md
    onion, chopped
  • 1
    egg, beaten
  • 1 md
    green pepper, chopped
  • 1 c
    shredded cheddar cheese
  • 1 can
    whole corn, drained
  • 1 can
    cream style corn
  • salt & pepper to taste

How To Make sweet corn casserole

  • 1
    Saute onion and green pepper in the 1/2 cup butter until soft. Use low temp to not burn butter.
  • 2
    Mix butter mixture with all other ingredients, except cheese.

    Pour into greased casserole dish (8x8 inch) and top with the 1 cup grated cheese.

    Bake (uncovered) at 375 degrees for 45 minutes to 1 hour, until firm.

    Double this recipe and it fits into a 13 x 9 inch casserole dish.
