Ingredients For summertime garden casserole

  • 2 lbs
    sliced yellow squash casserole
  • 4 Tbsp
    butter
  • 1/2 c
    chopped onion
  • 1/2 c
    chopped bell pepper (red, green, or orange)
  • 1 Tbsp
    lemon zest, grated
  • 1/2 c
    freshly grated sharp chedder cheese
  • 1/2 c
    vegan mayonnaise
  • 1 tsp
    sugar
  • 1
    beaten whole egg
  • chop fresh parsley for topping, and crumbled,ritz crackers

How To Make summertime garden casserole

  • 1
    Cook squash in boiling salted water until slightly tender about 3-5 minutes. Drain. Saute peppers and onions in butter until soft. Combine with squash. Fold in mayo,cheese,egg,sugar. salt and pepper. Pour into a 1 1/2 quart casserole dish. Top with crushed crackers and chopped fresh parsley. Bake uncovered for 30 minutes in preheated oven at 350 degrees. note:this can be frozen after cooking.
