Ingredients For summertime garden casserole

2 lbssliced yellow squash casserole
-
4 Tbspbutter
-
1/2 cchopped onion
-
1/2 cchopped bell pepper (red, green, or orange)

1 Tbsplemon zest, grated

1/2 cfreshly grated sharp chedder cheese
-
1/2 cvegan mayonnaise
-
1 tspsugar
-
1beaten whole egg
-
chop fresh parsley for topping, and crumbled,ritz crackers
How To Make summertime garden casserole

1Cook squash in boiling salted water until slightly tender about 3-5 minutes. Drain. Saute peppers and onions in butter until soft. Combine with squash. Fold in mayo,cheese,egg,sugar. salt and pepper. Pour into a 1 1/2 quart casserole dish. Top with crushed crackers and chopped fresh parsley. Bake uncovered for 30 minutes in preheated oven at 350 degrees. note:this can be frozen after cooking.
