Ingredients For spinach balls

2 boxfrozen chopped spinach (10 oz each)

3/4 cbutter
-
6 lgeggs
-
1 pkgchicken flavored stuffing (6 oz)

1/2 cshredded Parmesan cheese

We used a cookie scoop to have the balls a uniform size.

1Cook and drain the spinach. Squeeze as much water out as possible.

2Return the hot spinach to the pot. Add the butter. Stir until melted and set aside.

3In a medium mixing bowl, beat together the eggs.

4Stir in the stuffing mix and Parmesan cheese.

5Stir in slightly cooled spinach.

6Cover and chill for 2 hours.

7Preheat the oven to 350 degrees F. Form walnut-sized balls out of the spinach mixture.

8Bake on an ungreased cookie sheet for 20 minutes.
