sissa's ham and broccoli casserole
One of my grand-kids is not fond of vegetables, but she loves my broccoli casserole! I love it too, though it's not for those who are strict calorie counters. It makes a great side dish for holiday meals, but it can be served as a main dish also. For vegetarians, omit the ham, and use cream of onion soup instead of the chicken soup.

Ingredients For sissa's ham and broccoli casserole

4 cbroccoli florets, cooked fork tender (see *note)

1/2 ccooked smoked ham, chopped

1/3 csweet onion, diced small

1 cancream of chicken & mushroom soup (see *note)

3/4 cmayonnaise

4 Tbspbutter (1/2 stick), melted

salt & pepper to taste

2 lgeggs, slightly beaten

1 1/2 cshredded extra-sharp cheddar cheese, divided

1sleeve ritz "everything" crackers (see*note), crumbled
How To Make sissa's ham and broccoli casserole

1Gather ingredients. Preheat oven to 350 degrees F.

2Cook broccoli until just fork-tender; drain well. (Hint: I use the 12 oz. broccoli florets that come in a microwavable pouch.)

3Place drained broccoli in a mixing bowl. Use kitchen shears to cut/chop the broccoli.

4To the chopped broccoli, add ham and onions; set aside.

5In a medium mixing bowl, mix together soup, mayonnaise, melted butter and salt & pepper (to taste.)

6To the soup mixture, add 2 slightly beaten eggs; mix thoroughly.

7Pour soup mixture over broccoli in bowl; mix well.

8Add 3/4 cup shredded extra-sharp cheddar cheese; mix to combine.

9Pour into 8"x 8" baking dish.

10Top with remaining 3/4 cup cheese and crushed crackers.

11Bake, uncovered, in preheated 350 degrees F oven for 1 hour. Let stand for 5 to 10 minutes before serving. Serve hot or warm. Cover and refrigerate leftovers.

12*NOTE: *You may use fresh or frozen broccoli; drain well before proceeding. *Cream of chicken soup works well, also. *Plain Ritz crackers may be used if the "Everything" Ritz crackers are unavailable. About 30 crackers. *If you have black truffle salt, use it! So good!
