sissa's ham and broccoli casserole

One of my grand-kids is not fond of vegetables, but she loves my broccoli casserole! I love it too, though it's not for those who are strict calorie counters. It makes a great side dish for holiday meals, but it can be served as a main dish also. For vegetarians, omit the ham, and use cream of onion soup instead of the chicken soup.

Ingredients For sissa's ham and broccoli casserole

  • 4 c
    broccoli florets, cooked fork tender (see *note)
  • 1/2 c
    cooked smoked ham, chopped
  • 1/3 c
    sweet onion, diced small
  • 1 can
    cream of chicken & mushroom soup (see *note)
  • 3/4 c
    mayonnaise
  • 4 Tbsp
    butter (1/2 stick), melted
  • salt & pepper to taste
  • 2 lg
    eggs, slightly beaten
  • 1 1/2 c
    shredded extra-sharp cheddar cheese, divided
  • 1
    sleeve ritz "everything" crackers (see*note), crumbled

How To Make sissa's ham and broccoli casserole

    Gather ingredients. Preheat oven to 350 degrees F.
  • Cooked broccoli draining in mesh strainer over a bowl.

    Cook broccoli until just fork-tender; drain well. (Hint: I use the 12 oz. broccoli florets that come in a microwavable pouch.)
  • Broccoli chopped with kitchen shears in bowl.

    Place drained broccoli in a mixing bowl. Use kitchen shears to cut/chop the broccoli.
  • Adding ham to broccoli and onions in bowl.

    To the chopped broccoli, add ham and onions; set aside.
  • Adding salt and pepper to soup and mayo mixture.

    In a medium mixing bowl, mix together soup, mayonnaise, melted butter and salt & pepper (to taste.)
  • Adding beaten eggs to soup mixture.

    To the soup mixture, add 2 slightly beaten eggs; mix thoroughly.
  • Adding soup mixture to broccoli and ham mixture.

    Pour soup mixture over broccoli in bowl; mix well.
  • Adding cheese to mixture.

    Add 3/4 cup shredded extra-sharp cheddar cheese; mix to combine.
  • Pouring mixture into 8

    Pour into 8"x 8" baking dish.
  • Topping mixture in baking dish with cheese.

    Top with remaining 3/4 cup cheese and crushed crackers.
  • Baked casserole resting on counter.

    Bake, uncovered, in preheated 350 degrees F oven for 1 hour. Let stand for 5 to 10 minutes before serving. Serve hot or warm. Cover and refrigerate leftovers.
  • Serving spoon with a big dip of casserole.

    *NOTE: *You may use fresh or frozen broccoli; drain well before proceeding. *Cream of chicken soup works well, also. *Plain Ritz crackers may be used if the "Everything" Ritz crackers are unavailable. About 30 crackers. *If you have black truffle salt, use it! So good!
