Tori sent me this recipe on Thanksgiving 11-26-20, as one of the recipes from Chase's family. The note it to double on Thanksgiving... Doubled amounts in ( ) in recipe ingredients.

Ingredients For scalloped corn, geradine recipe

  • 1/2
    green pepper, chopped (1)
  • 1/2
    onion, finely chopped (1)
  • 2 Tbsp
    butter (4)
  • 2 Tbsp
    flour (4)
  • 1 tsp
    salt (2)
  • 1/4 tsp
    mustard, dry (1/2)
  • 1 c
    evaporated milk (2)
  • 1/2 c
    dry bread crumbs (1)
  • 1 Tbsp
    butter (2)
  • 2 c
    whole kernel corn, drained (4)
  • 1
    beaten egg (2)
  • 1/2 c
    buttered cracker crumbs (1) see note

How To Make scalloped corn, geradine recipe

    Cook pepper and onions in 2 T butter, for 5 min stirring constantly. Add flour mixed with seasonings and stir till blended. Add milk and cook until thick. Brown bread in 1 T butter and add with corn and egg. Blend all ingredients together. Put into greased baking dish. Cover with melted butter with crushed cracker crumbs. Bake at 400 degrees for 20 min.

    NOTE: there is no butter listed with the cracker crumbs, which translates into additional melted butter with the crushed cracker crumbs being their "buttered cracker crumbs".
