Tori sent me this recipe on Thanksgiving 11-26-20, as one of the recipes from Chase's family. The note it to double on Thanksgiving... Doubled amounts in ( ) in recipe ingredients.

1/2green pepper, chopped (1)

1/2onion, finely chopped (1)

2 Tbspbutter (4)

2 Tbspflour (4)

1 tspsalt (2)

1/4 tspmustard, dry (1/2)

1 cevaporated milk (2)

1/2 cdry bread crumbs (1)

1 Tbspbutter (2)

2 cwhole kernel corn, drained (4)

1beaten egg (2)

1/2 cbuttered cracker crumbs (1) see note
How To Make scalloped corn, geradine recipe

1Cook pepper and onions in 2 T butter, for 5 min stirring constantly. Add flour mixed with seasonings and stir till blended. Add milk and cook until thick. Brown bread in 1 T butter and add with corn and egg. Blend all ingredients together. Put into greased baking dish. Cover with melted butter with crushed cracker crumbs. Bake at 400 degrees for 20 min.

2NOTE: there is no butter listed with the cracker crumbs, which translates into additional melted butter with the crushed cracker crumbs being their "buttered cracker crumbs".
