Some grocery stores carry a pre-packaged rice/ bean/poblano pepper mix in the frozen veggie isle! I like to serve with grilled chicken that is sliced thin at an angle.

Ingredients For quick - sante fe casserole

1 pkgboil in the bag rice

2 mdpoblano peppers - diced

1/4 smyellow onion - chopped

1 cankernel corn - drained

1 canblack beans - rinsed
-
1 cancream of poblano soup

1 1/2 cmilk - 2%

1 clovegarlic
-
1 1/2 tspground pepper

2 ccheddar cheese, shredded
How To Make quick - sante fe casserole

1Pre-heat oven to 375
-
2Mix all ingredients except cheese, and reserve 1/2 tsp of ground black pepper.

3Pour into medium baking dish.

4Bake on 375 for 30 minutes.

5Remove from oven and top with shredded cheese.

6Sprinkle with remaining ground black pepper.

7Return to oven and cook remaining 15 mintues or until cheese is melted through and hot.
