I was given this recipe by a southern lady, who was a friend of my brother. She was a fabulous cook and person. It is difficult to determine whether this is a side or dessert!

Ingredients For pineapple casserole

  • 2 can
    drained, crushed pineapple (20 ounce size cans)
  • 1 c
    sugar
  • 1/2 c
    flour
  • 1
    sleeve of crushed ritz crackers
  • 2 c
    sharp cheddar cheese, shredded
  • 1 stick
    butter, melted

How To Make pineapple casserole

  • 1
    Put drained pineapple in casserole dish sprayed with Pam. Mix sugar & flour together & sprinkle over pineapple. Next sprinkle with grated cheese, then top with ritz cracker crumbs. Melt butter & pour over ritz crackers. Bake at 350 degrees for 35 to 40 minutes or until golden brown.
