Ingredients For passover spinach casserole

2 pkg10 (ounces) frozen chopped spinach

1/2 cmargarine or butter

1-2crushed clove garlic
-
1 Tbsppotato starch
-
2 Tbspdried onion soup mix

2eggs, beaten

1/2 cmatzo meal
How To Make passover spinach casserole

1Cook spinach; drain well. Melt margarine in skillet and saute garlic. Blend in potato starch, then onion soup mix. Add a little water. Remove from heat.

2Stir beaten egg and matzo meal into spinach. Add margarine mixture, then salt and pepper to taste.

3Pour into well greased 1 1/2 quart casserole dish. Bake at 350 degrees for 25 minutes.
