This is an old recipe from Flavors of Cape Cod cookbook. I remember my mom making this many times and she would bake it with a nice bread crumb topping and just the right amount of spice in it. This is very similar to hers.

Ingredients For old fashioned stewed tomatoes ` flavors of cape cod

  • 4 md
    tomatoes, peeled and diced (or canned)
  • seasonings to taste: basil, oregano, marjoram, parsley, dill, caraway, onion flakes
  • 2 tsp
    sugar
  • 1/2 tsp
    salt
  • pepper to taste
  • butter to taste
  • 2 slice
    bread, diced

How To Make old fashioned stewed tomatoes ` flavors of cape cod

    Mix all ingredients in saucepan and bring to boil. Simmer for few minutes to meld the flavors. Alternate: pour all ingredients into baking dish and bake for 10 minutes at 350 degrees. Dot the stewed tomatoes with butter just before serving.

    I like to top the casserole dish with buttered bread crumbs with Parmesan cheese added, yum.
