Ingredients For mimi's cornbread stuffing

  • 1 pkg
    yellow cornbread (6 oz) mix, prepared
  • 1 box
    stuffing mix (6 oz)
  • 1 lb
    ground sausage, tube
  • 2 stalk
    celery, chopped
  • 1 md
    onion, chopped
  • 1/2 md
    bell pepper chopped
  • 2 clove
    garlic, chopped
  • 1 sprig
    fresh sage, chopped
  • 1 sprig
    fresh oregano, chopped
  • 1 stalk
    fresh basil, chopped
  • 1/2 bunch
    fresh parsley, chopped
  • 1 bunch
    green onions, chopped
  • 1 tsp
    fresh ground cracked pepper
  • 1 pkg
    onion soup mix
  • 2 c
    hot water
  • 2 lg
    eggs, well beaten

How To Make mimi's cornbread stuffing

    Mix the cornbread mix according to directions and bake. While this is baking, brown ground sausage in a large skillet/pot. As the sausage browns, add the vegetables and sauté in with the sausage until translucent.

    Remove cornbread from the oven and crumble into a large bowl. Pour the box of stuffing and mix together. Pour mixture over the breads in the large bowl. Toss to mix well.

    Dissolve the onion soup mix in the two cups of water that has been heated in microwave. Stir to dissolve well and pour over the bread/meat mixture in the large bowl. Fold in your fresh herbs and pour in the beaten eggs and mix well. Taste, but careful to not salt too much, there is salt in the onion soup mix. If mixture appears a little dry add a little more water to moisten. The mixture should be moist but not runny! It will thicken as it bakes.

    Preheat oven to 350 degrees. Spray oil in a 9x13 pan. Put stuffing/dressing and cover with foil bake 20-30 minutes to heated through. Remove foil and cook 5 more minutes to brown the top a little. Enjoy.
