My mother found this recipe in our local newspaper and it is a "hit" anytime I make it. Whenever I make it for large family gatherings, I double the recipe and use a 9 x 13 baking dish.

Ingredients For mexican squash casserole

6medium yellow squash, sliced

1small onion, chopped

1/2small can, chopped green chilies

1 cvelveeta cheese, cubed or crumbled

ritz crackers, crushed
How To Make mexican squash casserole

1Cook the Squash and Onion with enough water to cover until tender. Stir and drain very, very well.

2Combine the squash, onions, chilies, and cheese in an 8 x 8 buttered baking dish.

3Top with the crushed Ritz crackers and bake at 375 degrees for 15 minutes.
