It had been awhile since I made this. I had a recipe I tweaked and made my own many years ago. I went by what I could remember from making it so many times...I actually think I out did the original..So cheesy good. I usually take the leftovers ( if there are any) and make deep fried macaroni and cheese balls..oh my! To die for.. Enjoy!! My pictures

Ingredients For mac & cheese - cass's

  • 1 lb
    cooked macaroni ( i used cellentani) drained, do not rinse
  • 1 c
    butter
  • 2 c
    grated pepperjack cheese
  • 1 c
    shredded, sharp cheddar cheese
  • 3/4 c
    shredded muenster cheese
  • 1/2 c
    shredded, parmesan cheese
  • 1/2 c
    real bacon bits ( optional)
  • 2 c
    half and half
  • 2 c
    cream
  • 4
    eggs, blended
  • 1 tsp
    tony chachere's creole seasoning ( optional)
  • 1/2 tsp
    pepper
  • FOR THE SAUCE
  • 4 Tbsp
    butter
  • 4 Tbsp
    all purpose flour
  • 2 c
    milk
  • 1 c
    shredded cheddar cheese
  • 1/2 tsp
    ground nutmeg
  • 2 tsp
    ground mustard
  • 1 tsp
    salt
  • 1 tsp
    pepper
  • TOPPING
  • 3/4 - 1 c
    italian bread crumbs or panko crumbs
  • 1/2 c
    shredded, parmesan cheese
  • 1 tsp
    paprika
  • 1 1/2 tsp
    hot pepper flakes ( optional)
  • 1/2 tsp
    garlic powder
  • 1/2 c
    butter, melted

How To Make mac & cheese - cass's

    Preheat oven to 350. Grease a 13 x 9 baking dish, set aside. Prepare macaroni as manufacturers suggest on the package, drain, do not rinse.

    Make sauce: In a medium saucepan, melt butter over medium heat, when melted; slowly whisk in the flour, stirring till smooth. Slowly add the milk and stirring constantly until thickened, stir in the cheese, nutmeg, pepper, mustard powder and salt. set aside.

    In a small saucepan, melt the 1 cup of butter. In a large bowl place the cooked macaroni and stir in the butter. In a bowl, mix the muenster, pepper jack, parmesan and sharp cheddar; stir this into the macaroni. Next, add cheese sauce prepared above stir; then add the cream and half and half, eggs, then the spices. Stir together till well blended.

    Stir in the bacon

    Pour this into a 9 x 13 prepared baking dish. Mix the topping ingredients, all but the butter. Evenly spread the crumbs over the macaroni and drizzle the butter evenly over the crumbs. ** I forgot to get a pic after drizzling the butter, but you get the picture.

    Bake till cheese begins to bubble and top is golden brown, about 45 minutes. I hope you enjoy it as much as my friends and family have.
