All the right textures and ingredients that just sit right with each other. Not kidding! Hominy, sour cream, pimentos, green chiles and cheese...what's not to like. This is not a stand-alone dish. I first had this at a cast party while participating in a play at the Los Alamos Little Theatre in 1990. Someone brought this and it was wonderful.

Ingredients For los alamos national laboratory hominy casserole

  • 2 can
    16 oz. cans white hominy, drained and rinsed
  • 1 lg
    drained, diced pimentos (jar)
  • 8 oz
    sour cream
  • 16 oz
    chopped green chile
  • 1 1/2 c
    shredded cheddar cheese (or colby-jack)
  • salt and pepper to taste

    Lightly spray a 9x13 glass dish. Preheat the oven to 350F.

    In a mixing bowl, combine all ingredients and stir to thoroughly combine. Pour into the greased pan and bake for 30 minutes. **You might want to top with more cheese to melt in the end...your choice.
