1 lgvidalia sweet onion, peeled and thinly sliced

1 pkgmini pepperoni

1 Tbspsea salt mixed with black pepper

4 Tbspall purpose flour

1 cheavy cream
-
2 cwhole milk
-
8 ozcream cheese, softened

3 lbrusset potatoes, thinly sliced

8 ozextra sharp cheddar cheese, shredded
How To Make honey margarine scalloped potatoes with pepperoni

1Whisk margarine and honey together in a medium bowl until combined. Set aside.

2Preheat oven to 350 degrees F.

3Lightly coat the bottom and sides of a 9x13 inch baking dish with cooking spray.

4Heat 2 tablespoons honey margarine in a large skillet over medium heat. Add the onion, mini pepperoni and sea salt/black pepper and saute for 5 minutes, or until the onion and pepperoni are tender. Remove from heat and set aside.

5Melt 3 tablespoons honey margarine in a medium saucepan over medium heat. Add flour and whisk to form a roux. Cook for 2 minutes.

6Slowly add heavy cream, milk and cream cheese, whisking constantly. Bring roux to a simmer and let thicken just slightly, about 2 to 3 minutes after coming to a simmer. Remove from heat and set aside.

7Layer half of the potatoes, half of sauteed onion/pepperoni mixture, half the shredded cheese and half the sauce in a prepared baking dish. Repeat the layers.

8Spread remaining honey margarine evenly. Cover the baking dish with foil and bake for 1 hour. Remove the foil and bake an additional 30 minutes or until the potatoes are easily pierced with a fork.

9Remove from the oven and let cool for 10 minutes before serving.
