easy squash casserole
This is one of the first dishes to go at any of our family gatherings and I always double it! It literally melts in your mouth! It's so creamy and cheesy and the buttery crackers on top give it a little crunch and brings it all together. My mouth is watering just thinking about it!

Ingredients For easy squash casserole

5-6medium yellow squash cut into 1/4 inch rounds that has been washed

1 mdsweet onion diced small

1 lgegg, slightly beaten

1/4 cmayonnaise

1/2 csour cream
-
1/4 cmilk
-
2 1/2 cshredded cheddar cheese

1full sleeve of ritz crackers crushed

3 Tbspmelted butter
-
salt & pepper to your taste

2 Tbspolive oil
-
1 tsponion powder
-
1/2 tspgarlic powder
How To Make easy squash casserole

1Preheat oven to 350 degrees and lightly grease a casserole dish or tin pan. Season with salt and pepper & saute' squash and onion in 2 tablespoons of olive oil over medium high heat, until tender, about 10 minutes or so, drain completely and set aside. (adjust heat if needed, being careful not to burn the squash)

2In a large bowl, whisk together egg, garlic powder, onion powder, mayonnaise, sour cream, and milk. Stir in 3/4 cup of cheese, squash and onion. Transfer mixture to casserole dish or pan.

3Mix crushed Ritz crackers with the butter. Put the rest of the cheese on top and then place the crackers on top of the cheese. Bake for around 30 minutes give or take depending on your oven. You want it to be golden brown on top and the cheese bubbly. (I like to put aluminum foil over the top for the first 22 minutes, then take it off for the remainder of the cook time, so the cheese and crackers don't burn on top.)
