These are the BEST scalloped potatoes ever. Very moist and cheesy. The addition of ham is optional. The perfect comfort food!

Not only are these scalloped potatoes easy to make, but they're also delicious. Parboiling the potatoes ahead of time speeds up the cooking process. The cheese sauce is so creamy and cheesy. The addition of ham pieces adds another depth of flavor to the side dish. These scalloped potatoes would be an easy holiday side dish. Or, it can be made after the holiday with leftover ham.

Ingredients For creamy cheesy scalloped potatoes

6 cpotatoes, parboiled, sliced or diced

1/4 cbutter

2 Tbsponion, diced

1/4 call-purpose flour

1 tspsalt

1/2 tspground mustard
-
dashground pepper
-
1 1/2 cwhole milk (can use part cream or half & half)

1 1/2 ccheddar cheese, shredded
-
2 ccooked ham, diced (optional)
How To Make creamy cheesy scalloped potatoes

1Preheat oven to 350 F. Spray casserole dish with cooking oil spray or grease casserole dish with shortening.

2Saute onion in butter.

3Add 1/4 cup flour, salt, mustard, and pepper to onion and butter.

4Gradually add milk/cream whisking to make a nice white sauce. Stir and cook until thick.

5Add shredded cheese, potatoes and ham (if so desired). Stir all ingredients together. Add a bit more milk if needed. The potatoes will absorb some of the milk so you may need a little more.

6Pour into greased casserole dish. Bake uncovered in oven for about 30 min. Then, spread more cheese on top and bake for 10-15 min longer before removing from oven.
