I'm getting older, so my elders are passing away. There was always a bit of competition among my aunts and grandmothers about dressing and chocolate pies. This is one of the dressings that was always a hit a family gatherings. I don't want to start an argument between younger family members by stating who's it was!!

Ingredients For cornbread dressing

1 1/4 call-purpose flour

1 cyellow cornmeal
-
1 1/2 Tbspbaking powder

1/2 tspsalt

1 cmilk
-
1/4 cvegetable oil
-
1 lgegg, beaten
-
3 cchicken broth
-
2 ccelery, chopped
-
2 conions, chopped (vidalia or Texas sweet preferred)

1/2 cgreen onions, chopped
-
1/4 cdried parsley flakes
-
1/2 tsppoultry seasoning, or more to taste
How To Make cornbread dressing

1Combine the first 4 ingredients in a large bowl. Make a well in the center of the mixture.

2Combine the milk, oil, and egg. Add the wet ingredients to the well of the dry ingredients. Stir just until moistened. Pour the batter into a greased 9-inch baking dish. Bake at 400 degrees F for 25 minutes or until a wooden pick comes out clean. Cool in a dish on a wire rack. Once cool, crumble the cornbread into a large bowl.

3Combine the broth, celery, onions, green onions, poultry seasoning, and parsley flakes in a saucepan. Bring to a boil. Reduce heat. Simmer, uncovered for 10 to 12 minutes until the vegetables are tender.

4Add to the reserved crumbled cornbread. Stir well. Spoon into a greased 13x9x2 inch baking dish. Bake at 350 degrees F for 40 minutes or until golden brown on top.
