I make this dish for holiday dinners. I usually double the recipe.

Ingredients For cornbread casseole

1/2 cbutter
-
1 pkgjiffy corn muffin mix
-
1 mdonion, chopped
-
1egg, beaten
-
1 mdgreen pepper, chopped
-
1 cshredded cheddar cheese
-
1 canwhole corn kernels, drained

1 cancorn, cream style
-
salt & pepper to taste
How To Make cornbread casseole

1Saute onion and green pepper in 1/2 cup butter.

2Mix onion and peppers with all other ingredients.

3Place in greased casserole dish - 8 X 8 inches

4Top with the 1 cup grated cheese.

5Bake uncovered at 375 degrees for 45 minutes to 1 hour, until firm.

6Double this recipe and it fits into a 13 X 9 inch casserole dish.
