This salad/side dish is great for a Luau themed party or anything with teriyaki sauce. Looks beautiful if served in a cored out 1/2 of a pineapple or melon.

Ingredients For cold rice salad

  • 1 box
    fried rice mix, or almond fried rice mix
  • 1 sm
    jar of marinated artichoke hearts, drain and save liquid
  • 1 sm
    can of sliced black olives
  • 1 sm
    can of sliced water chestnuts
  • 1/4 c
    green bell peppers, diced small
  • 3
    spring onions, sliced (use all the onion, green and white)
  • 1 sm
    jar of red pimentos, diced
  • 1/4 c
    mayonnaise
  • 1 sm
    pckg of slivered almonds

How To Make cold rice salad

  • 1
    Prepare Fried Rice mix according to directions. Cool 5 minutes then add all other ingredients; mix and chill (add some of the retained artichoke hearts liquid if it is dry) serve cold.
