Ingredients For carrot souffle

1 3/4 lbpeeled carrots

1 cbrown sugar, packed

1 1/2 tspbaking powder

1 1/2 tspvanilla
-
2 Tbspflour
-
3eggs, well beaten
-
1stick butter, room temp
-
powdered sugar for garnish
How To Make carrot souffle

1Preheat oven to 350, grease a 2 qt baking dish

2Cook carrots until very soft, drain well.

3Transfer to large mixing bowl. While still warm add sugar, baking powder and vanilla. Beat until smooth.

4Add flour and mix well.

5Add eggs and mix well.

6Add butter and mix well.

7Transfer to baking dish and bake 1 hour, top should be golden brown. Garnish with powdered sugar.
