Ingredients For carrot souffle

  • 1 3/4 lb
    peeled carrots
  • 1 c
    brown sugar, packed
  • 1 1/2 tsp
    baking powder
  • 1 1/2 tsp
    vanilla
  • 2 Tbsp
    flour
  • 3
    eggs, well beaten
  • 1
    stick butter, room temp
  • powdered sugar for garnish

How To Make carrot souffle

  • 1
    Preheat oven to 350, grease a 2 qt baking dish
  • 2
    Cook carrots until very soft, drain well.

    Transfer to large mixing bowl. While still warm add sugar, baking powder and vanilla. Beat until smooth.

    Add flour and mix well.

    Add eggs and mix well.

    Add butter and mix well.

    Transfer to baking dish and bake 1 hour, top should be golden brown. Garnish with powdered sugar.
