Ingredients For broccoli swiss cheese casserole

24 ozsmall curd cottage cheese

3eggs

1/4 call purpose flour

1/4 cbutter, melted

20 ozfrozen chopped broccoli, thawed and drained (or use fresh!)

2 cshredded swiss cheese
-
1 canwhole kernel corn, drained (8 3/4 ounce can)

1/4 cfinely chopped onion
-
1/2 tspsalt
-
1/4 tsppepper
-
4 dashhot sauce
-
2 Tbspbutter
-
1/3 csoft breadcrumbs
-
8 slicebacon, cooked and crumbled
How To Make broccoli swiss cheese casserole

1Combine the first 4 ingredients in the container of a blender or food processor. Process on high for 1 minute or until smooth, stopping once to scrape down the sides. Set aside.

2Combine the broccoli and the next 6 ingredients in a large bowl. Add the reserved cottage cheese mixture; stir well. Pour into a lightly greased shallow 2 quart casserole dish.

3Melt 2 tablespoons butter in a small saucepan over low heat; add the breadcrumbs and cook until golden, stirring occasionally. Remove from the heat; stir in the bacon.

4Sprinkle the breadcrumb mixture over the casserole. Bake uncovered at 350 degrees for 45 minutes or until thoroughly heated.
