My niece got this recipe, many years ago, from her mother-in-law who grew up in Louisiana. It is a delicious side that we now serve on all holidays. It is almost like a sweet potato pie and goes perfectly with your holiday ham or turkey.

Ingredients For becky's sweet potato casserole

4 lgsweet potatoes, baked, peeled and mashed

1 3/4 cgranulated sugar

4 lgeggs
-
1 1/4 stickbutter, melter

2 tspvanilla extract
- TOPPING

1/3 cflour
-
1 clight brown sugar
-
1 stickbutter, melted
-
2 cchopped pecans, toasted
-
1/4 tspground cinnamon (for garnish)
How To Make becky's sweet potato casserole

1Heat oven to 350 degrees F. Grease a 13X9 inch baking sheet with cooking spray. Set aside.

2In a large bowl, combine the sweet potatoes, sugar, eggs and butter. Transfer to prepared baking dish.

3In a medium size bowl, combine the flour, brown sugar, butter and pecans. Mix well. Mixture will be slightly moist and crumbly.

4Crumble topping mixture evenly over sweet potatoes in baking dish. Sprinkle evenly with cinnamon, if desired.

5Bake for 40 - 50 minutes or until hot and bubbly.
