becky's sweet potato casserole

My niece got this recipe, many years ago, from her mother-in-law who grew up in Louisiana. It is a delicious side that we now serve on all holidays. It is almost like a sweet potato pie and goes perfectly with your holiday ham or turkey.

Ingredients For becky's sweet potato casserole

  • 4 lg
    sweet potatoes, baked, peeled and mashed
  • 1 3/4 c
    granulated sugar
  • 4 lg
    eggs
  • 1 1/4 stick
    butter, melter
  • 2 tsp
    vanilla extract
  • TOPPING
  • 1/3 c
    flour
  • 1 c
    light brown sugar
  • 1 stick
    butter, melted
  • 2 c
    chopped pecans, toasted
  • 1/4 tsp
    ground cinnamon (for garnish)

How To Make becky's sweet potato casserole

    Heat oven to 350 degrees F. Grease a 13X9 inch baking sheet with cooking spray. Set aside.

    In a large bowl, combine the sweet potatoes, sugar, eggs and butter. Transfer to prepared baking dish.

    In a medium size bowl, combine the flour, brown sugar, butter and pecans. Mix well. Mixture will be slightly moist and crumbly.

    Crumble topping mixture evenly over sweet potatoes in baking dish. Sprinkle evenly with cinnamon, if desired.

    Bake for 40 - 50 minutes or until hot and bubbly.
