This recipe can easily be halved. It is nice and cheesy, so even kids will eat this (sometimes!). I added the time for cooking the eggs to the prep.

Ingredients For baked spinach

2 pkgfrozen chopped spinach (10 oz)

2 Tbspminced onion

3 Tbspbutter

3 Tbspall-purpose flour

2 cmilk

3 lghard-boiled eggs, finely chopped

1/2 tspsalt

1/4 tspground nutmeg

1/4 tsppepper

1/2 cshredded American cheese

1/2 csaltine cracker crumbs

1 Tbspbutter, melted

How To Make baked spinach

1Cook the spinach according to package directions. Drain well and set aside.

2Saute onions in 3 tablespoons butter in a large skillet over medium heat until tender. Add the flour, stirring well. Cook 1 minute, stirring constantly. Gradually add the milk and cook over medium heat, stirring constantly. Wait until the mixture is thickened and bubbly.

3Add the reserved spinach, eggs, and the next three ingredients. Stir well. Spoon into a buttered shallow 1 1/2-quart baking dish. Sprinkle with the cheese.

4Combine the cracker crumbs and melted butter. Sprinkle over the cheese on the casserole. Then sprinkle with paprika, if desired.

5Bake, uncovered, at 375 degrees F for 20 minutes or until lightly browned.
