1 craw long grain white rice

2 cwater

4 ozcream cheese, softening

3/4 csour cream

3 Tbspmayonnaise

1 cfrozen spinach, thawed and water pressed out of it

1/2 csweet onion, finely chopped

1/2 creal bacon bits

1 cshredded cheddar cheese, divided
How To Make baked spinach rice bake

1Preheat oven to 350 degrees. Spray a 2-1/2 quart casserole dish with nonstick cooking spray and set aside.

2Combine rice, water, salt and oil in a 2-quart saucepan, then bring almost to a boil over high heat. When water starts to boil, turn heat to low, cover and cook for 15 minutes.

3Remove from heat, stir once, then cover and let stand for 5 minutes.

4In a medium mixing bowl, combine cream cheese with sour cream and mayonnaise, then beat to blend to smooth.

5Stir in spinach, onion, bacon bits, and 1 cup of the cheddar cheese.

6Fold in cooked rice thoroughly. Turn into prepared casserole dish.

7Sprinkle with remaining cheese . Place in oven and bake for 20 minutes, or until bubbly and heated through.
