Cooked bacon be used instead of bacon bits. I would use 1/4 pound crisply cooked and crumbled bacon.

Ingredients For baked spinach rice bake

  • 1 c
    raw long grain white rice
  • 2 c
    water
  • 1 tsp
    salt
  • 1/2 tsp
    vegetable oil
  • 4 oz
    cream cheese, softening
  • 3/4 c
    sour cream
  • 3 Tbsp
    mayonnaise
  • 1 c
    frozen spinach, thawed and water pressed out of it
  • 1/2 c
    sweet onion, finely chopped
  • 1/2 c
    real bacon bits
  • 1 c
    shredded cheddar cheese, divided

How To Make baked spinach rice bake

    Preheat oven to 350 degrees. Spray a 2-1/2 quart casserole dish with nonstick cooking spray and set aside.

    Combine rice, water, salt and oil in a 2-quart saucepan, then bring almost to a boil over high heat. When water starts to boil, turn heat to low, cover and cook for 15 minutes.

    Remove from heat, stir once, then cover and let stand for 5 minutes.

    In a medium mixing bowl, combine cream cheese with sour cream and mayonnaise, then beat to blend to smooth.

    Stir in spinach, onion, bacon bits, and 1 cup of the cheddar cheese.

    Fold in cooked rice thoroughly. Turn into prepared casserole dish.

    Sprinkle with remaining cheese . Place in oven and bake for 20 minutes, or until bubbly and heated through.
