Ingredients For baked jack corn

  • 2 lg
    eggs
  • 1 1/2 c
    sour cream
  • 2 c
    fresh corn kernels
  • 1 pkg
    8-oz. pkg. monterey jack cheese, cut into 1/2 inch cubes
  • 1/2 c
    soft bread crumbs
  • 1 can
    4.5 oz. can chopped green chilies, drained
  • 1/2 tsp
    salt
  • 1/4 tsp
    pepper
  • 1/2 c
    shredded cheddar cheese

How To Make baked jack corn

  • 1
    Combine eggs and sour cream in a large bowl; stir in corn and next 5 ingredients. Pour into a greased 10-inch quiche dish or 2 qt. baking dish.

    Bake at 350 degrees F for 35 minutes or until a knife inserted in center comes out clean. Sprinkle with cheddar cheese, and bake 5 more minutes.

    Let stand 10 minutes before serving.
