Very easy recipe that I've been making for a long time to serve with Mexican foods, from enchiladas to tacos.

Ingredients For "yellow" rice

  • 8 oz
    package yellow rice mix
  • 1 1/4 c
    chicken or vegetable broth
  • 2 Tbsp
    olive oil
  • 15 oz
    can black beans, rinsed and drained
  • 16 oz
    can sweet corn, drained
  • 2 tsp
    fresh lime juice
  • 1 tsp
    cumin

How To Make "yellow" rice

  • 1
    In saucepan with lid, bring rice, broth and oil to the boil.

    Reduce heat and simmer for 20-25 minutes.
  • 3
    Meanwhile, mix together beans, corn, lime juice and cumin. Stir into rice and serve.
