Ingredients For wild rice with mushrooms

2 1/2 cwater

1 cuncooked wild rice

1/2 cbeef consomme, undiluted

1 Tbspbutter

2 cmushrooms, sliced

3/4 ccelery, chopped

3/4 conion, chopped

1/4 cdry sherry or dry white wine

1/4 tspblack pepper
How To Make wild rice with mushrooms

1Combine first 3 ingredients in a large saucepan and bring to a boil. Cover, reduce heat, and simmer for 1 hour and 10 minutes or until rice is tender and liquid is absorbed.

2Melt butter in a nonstick skillet over medium heat. Add mushrooms, celery and onion; saute' 10 minutes or until tender, stirring frequently.

3Add mushroom mixture, sherry or wine, and pepper to rice mixture; and stir well. Cook over medium heat, uncovered, 5 minutes or until liquid is absorbed, stirring frequently.
