Mom always made the best rice pilaf...this is a very different version with wild rice and apple. Enjoy!

Ingredients For wild rice & apple cider pilaf

3/4 cwild rice

2 cunsweetened appel cider

1/4 cbutter
-
1/2 csliced almonds
-
1/2 cgolden raisins

1/2 tspsalt

1/2 tspcinnamon

1/2 tspfresh ground black pepper

1/4 tspnutmeg

1 mdapple
How To Make wild rice & apple cider pilaf

1Wash rice in three changes of hot tap water, draining well at the end. Combine with cider and 1 c water in saucepan, bring to boil over high heat. Reduce and cover, simmer on low until tender but firm, 30-40 min. In large skillet, melt butter and add almonds and raisins. Cook, stirring, until almonds are light brown, about 5 min. Add salt, pepper, cinnamon and nutmeg. Stir in fresh chopped apple without peel or core, and rice. Cook until warmed through, about 1 min. Serve warm.
