Ingredients For wild rice and barley pilaf

2 Tbspbutter

1/2 cuncooked barley

1/2 cchopped onion

1 clovegarlic, minced

1 can(14.5 oz.) ready-to-serve chicken broth

1 cwater
-
1/2 cuncooked wild rice, rinsed, drained

1/2 tspgrated lemon peel
-
1/4 calmonds, slivered
-
2 Tbspcranraisins
-
1/8 tsppepper
How To Make wild rice and barley pilaf

1In a medium saucepan, melt butter over medium heat. Add barley; cook 6 to 8 minutes or until lightly browned, stirring occasionally.

2Add onion and garlic; cook and stir 2 to 3 minutes or until crisp-tender. Add broth and water. Bring to a boil. Stir in rice, lemon peel, almonds, cran-raisins, and pepper; return to a boil. Reduce heat; cover and simmer 50 to 60 minutes or until barley and rice are tender.
