Ingredients For veggie rice cups

2 Tbspolive oil

1 cshredded carrots

1 cfrozen peas, thawed

1 cspinach

3 1/2 ccooked rice, cooled

2 tspvegetable oil

2 lgeggs, beaten

1/4 cflour
How To Make veggie rice cups

1Preheat oven to 400 degrees. Spray muffin pan with cooking spray.

2Heat olive oil in skillet. Add carrots and cook until soft.

3Add peas and spinach. Cook until spinach is soft.

4Transfer veggies to a large bowl.

5Stir in rice, vegetable oil, eggs and flour.

6Spoon the mixture into the muffin tin cups.

7Bake 20 - 25 minutes.

8Let cool for 5 minutes before removing from pan.
