I don't know about you, but I love rice. Any kind of rice. Wild rice, though, is a nice change from white rice once in awhile. This recipe is so quick and easy. Preparation time is minimal. This is meant to be a side dish, but I have, on occasion, doubled the recipe and added leftover cooked, cubed chicken to it and I turned it into a main dish. (Or you can get a rotisserie chicken and cut some of it up and add to it.) I love versatility in a recipe and this one affords you the opportunity to do that.

Ingredients For vegetable wild rice skillet

  • 15 oz
    can chicken broth
  • 2 Tbsp
    butter or margarine
  • 16 oz
    package frozen cauliflower, carrots and broccoli
  • 1 box
    uncle ben's wild rice
  • 3/4 c
    shredded cheddar cheese (either white or yellow is ok)

How To Make vegetable wild rice skillet

    Heat broth and butter to boiling in a skillet.

    Stir in vegetables, rice and contents of seasoning packet that comes in the box of wild rice.

    Heat to boiling. Reduce heat to low.

    Cover and simmer for 20-25 minutes or until vegetables and rice are done.

    Sprinkle with cheese. Give it just a minute or two to melt and then serve.
