This Vietnamese side dish goes well with Bo Luk Lak - Shaking Beef Stir Fry. It also is delicious any time you want some out of the ordinary rice.

Ingredients For tomato rice

  • 1 Tbsp
    cooking oil of choice
  • 1 Tbsp
    minced garlic
  • 2 Tbsp
    tomato paste
  • 2 c
    prepared rice (left-over is fine)
  • 1-2 tsp
    fish sauce, or to taste

How To Make tomato rice

  • 1
    Heat oil in a pan over medium high heat. Add garlic and sauté for 20 seconds until fragrant.

    Add tomato paste and cook for 1 minute.

    Add rice and toss it with the garlic and tomato paste mixture. Add a few splashes of fish sauce and taste. Adjust the saltiness to your taste.
